Sharing recipes- Making sushi

     I'm not a big fan of cooking, but my type A personality loves a challenge. So, a few years ago I began making sushi and I haven't quit since. Making sushi at home can be both fun and affordable, especially if you keep the main ingredients at home. A bamboo roll, rice vinegar and sushi grade rice are all musts. Below are some simple instructions for spicy tuna  rolls. You can purchase Ahi Tuna at places like Whole Foods in a sushi grade or visit your local fish market for fresh fish.

1. Prepare your sushi rice- In a rice cooker add three cups of sushi rice with water per rice cooker instructions. In a separate sauce pan mix 1/3 cup rice vinegar, 2 tablespoons of sugar and one teaspoon of sugar. Mix over low heat until the sugar and salt are fully dissolved.

2. Pour your mixture evenly over your rice in a large mixing bowl. Fold in. Place a cold wet towel over the rice to begin the cooling process. For a quicker cool you can place your large bowl of rice over a smaller bowl filled with ice.

3. Dice up the ahi tuna into small pieces and place them in a bowl.

4. In a separate small bowl mix two tablespoons of Mayonnaise (or wasabi mayo if you can find it) and 2 teaspoons of Siracha Chili Sauce and whisk. Mix with tuna and refrigerate.

5. Once your rice has cool place a sheet of seaweed down on a cutting board. With wet hand take some rice and spread evenly onto the seaweed working it out with your fingers. Add a sprinkle of sesame seeds and flip over.

6. Add slivers of avocado, your fish and cucumber or carrots if desired. Then roll your seaweed tightly.

7. Use a cling wrap covered bamboo sheet to press the roll into shape. Cut the rolls with a serrated knife (a bread knife works well).

Voila, you've made sushi cut rolls. You can use this same process with any fish and veggie combo. Delicious and fun this is also a great process for a party. Everyone can join in making sushi.

  4. I may need to start doing this! My ex and I used to eat sushi weekly, but my latest (and greatest) boy does NOT do sushi. Period. I go through withdrawals, but am not big on "to go" sushi. Bookmarking for sure.
